The economic system of New France was based on the feudal system which continued for many years after the English conquest. The seigneurs had several obligations, among them the apportion of lots and the building of a grist mill for their censitaires or habitants. In return, the censitaires were required to grind their wheat at the seigneur’s mill and to give him one fourteenth of their flour as a fee.
In October 1825, Jacob Fortin was commissioned by the Séminaire de Québec to build the moulin de la Rémy. The mill was acquired by Héritage Charlevoix in 1992 and restoration work began in 1997. In July 2007, the mill was officially opened.
A brochure containing the history of the mill and its restoration may be purchased at the bakery.
